New York Deli's Chopped Liver

From Taste of Boulder, the cookbook of Boulder chef's recipes published for the 1995 Taste of the Nation benefit event. Sponsored by Share our Strength and held at the Glen Miller Ballrooom from about 1990-2005, the event helped raise money to feed the hungry.

Serves many (freeze some)

  • 3 TB Schmaltz or butter

  • 1 Onion, chopped

  • 5 lbs Chicken livers (rinsed and patted dry)

  • 1 TB Chopped garlic

  • 1/2 tsp ground pepper

  • 3 TB Sugar

  • 6 Hard-boiled eggs, peeled

Saute onion in schmaltz or butter in large pan. Add liver, garlic, pepper and sugar. Cook about 30 minutes. Spread on tray to cool. Process in food processor, adding cooked eggs. [I suspect you chop the eggs first, and I'd probably fold them in after the rest is processed.]
