Flagstaff House's Snapper Pops


  • 10oz Snapper

  • 10oz Raw Shrimp

  • 2 cups Shredded Coconut

  • 1tbls minced fresh Ginger

  • 1 tsp Chopped Garlic

  • 6 Fresh Scallion Chopped

  • 1 tsp crushed Black Pepper

  • 6 Lime leaf sliced

  • 2 tsp kosher salt

  • 5 Thai Chili peppers chopped fine

  • 2 tbls brown sugar

  • Salt and Pepper to taste

In food processor mix snapper and shrimp. Add remainder of ingredients and mix till pureed. Make small molds using a spoon on a sheet pan. Skewer molded pop with a stick and quickly grill till cooked.
