Flagstaff House Snapper Pops

10oz Snapper 

10oz Raw Shrimp

2 cups Shredded Coconut

1tbls minced fresh Ginger

1 tsp Chopped Garlic

6 Fresh Scallion Chopped

1 tsp crushed Black Pepper

6 Lime leaf sliced

2 tsp kosher salt

5 Thai Chili peppers chopped fine

2 tbls brown sugar

Salt and Pepper to taste


In food processor mix snapper and shrimp.  Add remainder of ingredients and mix till pureed.  Make small molds using a spoon on a sheet pan.  Skewer molded pop with a stick and quickly grill till cooked.
